The Holiday Drink – A Recipe
WHere is an easy interpretation of a cocktail featured on the seasonal menu. It's a large-volume premix which is packed full of tastes of a Christmas time, making it perfect for hosting a celebration. Reserve the remaining citrus syrup to use in breakfast cocktails, sweets, or for more rounds of this cocktail.

Yields 10 people
Ingredients for the Citrus Syrup (yields 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g caster sugar
For the Premix (yields 850ml, enough for 10)
400ml good quality vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml citrus syrup (as made above)
A few cranberries, for garnish
Mandarin essential oil, for finishing
Instructions
Making the Cordial: Put all the ingredients in a saucepan, bring to a simmer, agitating to dissolve. After that, remove from the burner and let it to cool completely. Transfer into a clean bottle, cap it and refrigerate it in the refrigerator, it can be stored for up to a month.
Preparing the Cocktail Base: Combine every liquid ingredients into one large bottle, let it rest for one hour, then pass it through best through cheesecloth, making it perfectly clear.
To serve: Measure 85ml of the premix to a mixing glass packed with ice, gently stirring lightly for a minute to cool it down. Strain to a chilled martini glass or a similar vessel, top with a few cranberries and complete it using a brief mist of the essential oil over the drink.
